This is one of my husbands favorite dishes! We had this meal while visiting my brother & sister-in-law and it’s absolutely delicious!! You can find many different versions online and I love that it’s an easy hands off recipe once you get everything prepped. I made a double batch of this recipe for the freezer and can’t wait to make it again! Hope you enjoy :)


  • 8 (5 to 7 ounces) bone-in skin on chicken thighs
  • 1/3 cup soy sauce
  • 1 can coconut milk
  • 3/4 cup rice wine vinegar
  • 8 garlic cloves minced
  • 4 bay leaves
  • 2 teaspoons pepper
  • 3-4 cubed peeled potatoes (optional)


  1. Marinate the chicken for 1 hour in all ingredients OR you can put all ingredients in a large pot and simmer for 2-3 hours stirring occasionally.
  2. Serve with rice sautéed in garlic and coconut oil and a green vegetable
